Shahi which means 'Royal' and Paneer when translated is ' Cottage Cheese' gives Shahi Paneer a royal feel ......Its a typical North Indian dish eaten with roti or naan.....Shahi paneer is preparation of paneer pieces in a thick, creamy and spicy gravy prepared in tomato, onion and cashewnuts paste.Because of its richness it is usually served in parties, dinners and other occasions which require special menu.....
Ingredients
1.Paneer -200g
2.Cashew nuts-12
3.Tomatoes-2(chopped)
4.Green chili-1(chopped)
5.Ginger
6.Onion-1(chopped)
7.Cumin powder(small jeera)-1 tsp
8.Asafetida (kayam)-1/8 tsp
9.Bay leaf-1
10.Coriander powder (Malli podi)-1 tbsp
11.Turmeric powder-1/4 tsp
12.Red chili powder-3/4tspn, adjust to taste
13.Yoghurt-2 1/2 tbsp
14.Sugar-1 tsp
15.Salt-1 tsp
16.Garam masala-1/4 tsp

Preparation
~Slice paneer into 3/4 inch cubes. Keep aside.
~Grind cashews into powder. Keep aside.
~Puree tomatoes, green chili & ginger in mixer(without adding water). Keep aside.
~Add oil in a pan, over medium heat. Shallow fry paneer cubes till they turn slightly brown.Remove from pan & keep aside.
~Add cumin powder to the same oil , add asafetida and bay leaves. Stir for a few seconds.(Will get great aroma now..u'll luv it)
~Add chopped onion & saute till transparent.
~Now add tomato puree, coriander powder, turmeric n chili powder. Cook the mixture, stirring occasionally for 2-3 minutes. It will become thicker.
~Add sugar, cashew powder & yoghurt. Cook for another minute then add little (1/2 cup)water & salt & bring to boil.
~Add paneer & cover the pan. Simmer for a few minutes over medium-low heat, till gravy is slightly thick in consistency.
~Add garam masala & coriander leaves & cook or 1 min.
Mouthwatering, quick to prepare and a perfect vegetable or paneer dish to serve on special occasions!
It tastes soo buttery without butter..you can reduce the amount of nuts if u need..do give a try my dear friends....:)
