Rava Kesari


                     
Its an Indian semolina dessert that is prepared as a festival special for occasions like Navratri or poojas. To make the kesari so soft, I use milk. It is mildly sweet and very rich in taste...

                       This sweet dish in the photo was actually prepared by my hubby..He started entering the kitchen as its Ramadan..This was soo easy for him to prepare..it just happened within minutes... And when i tasted it..i had to agree that he CAN cook..he he he.. It was damn tasty !!!

Ingredients

1.Rava(semolina)-1/2 cup
2.Sugar-1/2 cup
3.Milk-3/4 cup(depends)
4.Cashew nuts-5(break them into 2 pieces from center)
5.Kismis- little(unakka mundiri)
6.Ghee-3tbsp
7.Cardamom powder-1/4 tsp


Preparation

~Heat 1tbsp ghee in a kadai & roast the nuts & kismis in it.
~Add the rava into this & start roasting by stirring well.

~The key to a delicious Kesari is to slow roast rava in ghee till light pink without burning it.
~Meanwhile boil the milk in a sauce pan(chaya pathram).
~Add the sugar to the rava & stir well until it melts.(check the sweetness & add)
~Once the milk is boiled, pour little by little into the roasted rava mix & stir well & lower the flame.
~Need not add the whole milk..the rava has to just get wet with the milk..check & pour..
~Add nuts & kismis & cardomom powder & stir.
~Add rest of the ghee.
~When milk touches the whole of rava , when it becomes somwhat a halwa state,off the flame.
~Move it to a plate & spread it with thickness.
~Let it cool & serve....
~Can refrigrate it later on..
