Prawns Pepper Masala Roast - Kerala Style (Shrimp/Konju/Chemeen)

           This recipe is completely adapted from my mom...Tried it many times....A never failing recipe I have to say...Never got a chance to give a click...So here is it now shared for my dear friends...

        A very easily satisfying  fresh tasting prawns roast with the perfect spice of pepper & onions... Can be made as hot as you like....This preparation goes extremely well with chappathi, paratha, rice, appam, dosa, puri...actually anything...I love it with anything....A finger licking gravy which is simply delicious !!

 

Ingredients

1.Prawns- 1 kg
2.Onion-4 (large)
3.Green Chilly-1
4.Ginger (grated)-1 tbsp
5.Garlic (grated)-2 tbsp
6.Tomato-1 (medium)
7.Pepper powder-1 1/2 tsp or more (according to your spice)
8.Chilly powder-1/4 tsp
9.Garam masala-3/4 tsp
10.Curry leaves- 2 springs

Ingredients (for marination)

11.Chilly powder-1 tbsp
12.Pepper powder-1 tsp
13.Salt-1 tsp

Preparation

~Marinate the cleaned prawns for frying with ingredients 11 to 13 with little water & refrigerate for 15 mins. (you can keep it outside also) ~Slice the onions(thick slices) & grate ginger & garlic  keep aside.


~Heat 2-3 tbsp oil & saute ginger & garlic,curry leaves along with the slit green chilly till a color change.


~Add onions along with 1/2 tsp salt & saute in medium flame till translucent.


~Meanwhile shallow fry the prawns in a fry pan with required oil in two batches & keep aside.



~Add chopped tomato to the sauteed onions & cook till mushy.
~Add pepper & chilly powder & mix well.
~Pour 1 cup water & bring to boil.


~Add the fried prawns along with garam masala & close  the lid & cook in medium to low flame till the gravy thickens. (stir occassionally)


~Check the taste & adjust pepper & salt accordingly.

Mini Chicken Kebabs (Fried Version)


         Kebab is traditionally made with lamb...These are mini chicken kebabs which are actually quite easy to make & without a doubt, they are exceptionally tasteful....I guarantee !!


         Most of the Chicken Kebab or Kabab recipes are skewed and grilled or tandoor variety where the chicken chunks are marinated in special spices and then grilled on skewers or cooked in tandoor....
         This is a fried version & it may not be of the authentic type...But this is a simple Indian recipe that you can serve as an appetizer or as a side dish along with chopped onions/ coriander chutney/ tomato ketchup..It just tastes heavenly..A big thanks to my mom who shared this recipe with me...She tried it out from some cookery show..Something really interesting for kids too...!!


Ingredients

1.Chicken - 1/2 kg
2.Green Chilly - 5 (slit onto half & finely chopped)
3.Egg white - of 1 egg
4.Soya sauce -1tbsp
5.Onion - 3 (medium) (finely chopped)
6.Garlic - 4 cloves (grated)
7.Ginger - 3/4 tsp (grated)
 8.Bread crumbs-5-6 tbsps
9.Coriander leaves - 1 tbsp (nicely chopped)
10.Cumin seeds powder-1/2 tsp (optional)
11.Salt - as reqd


Preparation

~Slice the chicken into small pieces & de-bone them.


~Grind these slices into a thick paste. (need not grind for long)


~Into this chicken paste add chopped green chilly, grated garlic & ginger, chopped onions, soya sauce, egg white (only half of egg white would be required) chopped coriander leaves, cumin seeds powder & mix well with a spoon.
~Now give a taste & add required amount of salt & can increase the green chilly too..
~Add the breadcrumbs & combine well with your hands.


~Refrigerate this mix at least for half an hour. (or freeze for 15 mins)
~If its really very sticky add more of bread crumbs to adjust.
~Now make the shapes of mini kebabs & just deep fry them..

Beetroot Rava Kesari (Beetroot Semolina Pudding Cake)


       Beetroot...Something which I couldn't really accept in a sweet dish..Decided to prepare this red sweety when I saw this recipe in my facebook friends page by Ummu Salma...Never ever thought it would turn out this perfect & the taste of beetroot had a different touch too... The below pic was taken just after preparation...You'll get more better perfect shapes after cooling..

      
       Beetroot is a super-storehouse of both vitamin C and iron, which is packed with good news for your body.... It is included with extra vitamin C and this vitamin helps increase iron absorbtion which enhances the production of the body’s natural mood-lifter & reduces your blood pressure too..... So it would seem that munching fresh beetroot can literally make you smile !!
 
      This kesari's color is soo tempting that anyone would want to taste...Once you taste you will look for more.......

 

Ingredients

1.Beetroot (grated)-1 cup
2.Rava (Semolina/Sooji) -1 cup
3.Ghee-5 heaped tbsp (un-melted)
4. Sugar-1 cup
5.Milk-1/2 cup
6.Water-1 1/2 cup
7.Cashew nuts-6-10 (slit into two)
8.Raisins-2 tbsp
9.Rose water-2-3 tbsp
10.Cardamom powder-1 tsp

Preparation

~Heat 3 tbsp on ghee in a non-stick pot on low flame.
~Add rava into it & stir roast for 3 mins till you get a roasted aroma.
~Now add the grated beetroot with sugar & mix well.

~Cook for 2-3 mins (till the sugar dissolves & reaches a semi-halwa state)
~Add milk with water ..Mix well & close with lid.

~Meanwhile roast nuts & raisins in 2 tbsp ghee & keep aside (along with the ghee)
~Open the lid & stir.
~When the kesari starts hardening stir vigorously & add the roasted ghee with nuts & raisins,rose water & cardamom powder. 

~Cook till it reaches the kesari state (until when it becomes hard for you to stir..)
~Transfer the kesari to a thali (wide bottomed plate) & spread well tapping the top.

~Cool it to room temperature & refrigerate before use.
~Now cut it into desired shapes & serve.

Carrot Shapes (Weekly Event with Giveaways) [Mar 4-Mar 10] '13



       
            This event was actually started just as a game in my facebook page...All insisted to give away prizes...for which I had to search for sponsors...But after the seeing the difficulties everyone had taken in preparing various designs with just mere carrots involving their creativity & talent, Even I was happy to announce the winners...This was a contest for 1 week...I received 26 entries...Each one had its own story, creativity, hard work & lots of thinking behind the screens...I selected 10 entries out from it as nominations..All were just soo good that its still a difficult task for me to announce the winners..
