Dates Delight / Dates Pudding Cake

                  
         Anyone who likes dates will enjoy this rich date dessert... The recipe, which came out of my cousin's cookbook(Ramla M Iqbal), is one of my favorite dessert...This cannot be called a pudding since it stands hard as a cake from the outside..Cant be called a cake too, since its really soft, fluffy & moist from the inside like a pudding..So here it comes...its a perfect Pudding Cake...Rather its a Delight...!! 
 This is a fusion of dates with coconut & breadcrumbs...Will just love the combo.. 
 So lets read a bit info about Dates...
  • Selection of dates is very easy and you can have good ones if they appear fleshy and evenly coloured.
  • Helps in improving eye sight, specially night blindness. 
  • Helps increase one’s sexual stamina. 
  • Helps people suffering from constipation. Soak dates overnight and take it along with water to have added advantage.
  • Have high iron content and are very useful in treating anemia.
  • Have fluorine that slows down the process of tooth decay.
  • Help in lowering of the LDL cholesterol.
  • Great energy boosters as they contain natural sugars like glucose, sucrose and fructose. To get more advantage add dates to milk and make it a very nutritious snack.
  • Rich in vitamins and minerals.
  • And last but not the least, Dates are fat and cholesterol free!!


Ingredients

1.Dates - 1/2 cup (de-seeded)
2.Sugar - 1/2 cup (else add more of dates to reach the required sweetness)
3.Bread Crumbs - 1/2 cup
4.Milk - 1 1/4 cup
5.Butter - 1 1/2 tbsp
6.Coconut - 1/4 cup (dessicated/grated)
7.Baking powder-1/2 tbsp
8.Egg - 1


Preparation

~Grind dates with 1/4 cup milk & keep aside.


~In a blender add 1 cup milk, egg, bread crumbs, grinded dates paste & baking powder.
~Now melt butter  in a small fry pan.
~Add sugar to it & allow it to melt. (keep stirring)


~Once melted, off the flame & let it cool to room temperature.. (keep stirring still)


~Now pour this sweet butter mix to to the blender. (Do this step before it hardens)
~Blend for 1-2 mins.
~Check the sweetness & adjust the sweetness by adding more dates or sugar accordingly.
~Add coconut to this batter & mix well. 


~Grease the baking tray & pour the batter into it.
~Bake or pressure cook for 30 - 35 mins.
~Cool the delight to room temperature & refrigerate for atleast 1 hr.
~Will stay in your fridge fresh for 5-6 days..I don't think it will make you stay that long !!

Easy Semiya Payasam/ Vermicelli Kheer (Indian Dessert)


             This is  a very popular traditional Indian dessert, which is usually prepared at all special days including birthday, wedding or other festive occasions....It has a rich and creamy texture..in which vermicelli is sweetened with milk...Served warm, cold, or at room temperature, this creamy, delicious milk pudding is sure to please every age..Its the basic recipe here, but we can do a lot of improvisations to this to make it in your own style.... 

      So gonna enjoy this Republic day with something really sweet...something really INDIAN..I suppose..

 

Ingredients

1.Semiya (Vermicelli)-  200 gm (1 1/2 cup)
2.Water- 2 cup
3.Milk-1 litre
4.Sugar -12 tbsp
5.Ghee-2-3 tbsp
6.Nuts-1-2 tbsp
7.Raisins-2-3 tbsp
8.Milkmaid Condensed milk- 180 gm (2 small tins) (optional-else you can add extra sugar)
9.Cardamom powder (elakka podi/elaichi)-1 tsp
10.Salt- a pinch 


Preparation

~Heat ghee in large non-stick heavy bottomed cookware or uruli.
~Roast nuts & then raisins & keep them aside.


~Into this ghee stir roast the semiya for 2 mins.
~Now add water & let it boil.


~Once it starts boiling add the milk & mix well & allow it to boil. (stir occasionally)


~When it starts boiling & raises, reduce the flame to low.
~Add milkmaid condensed milk & mix well.
~Check the sweetness & add the sugar accordingly .
~Cook till the semiya is soft (Take little in a spoon, cool it  & check)
 

~Off the flame & add the roasted nuts, raisins,salt & cardamom powder & mix well.

  Easy, Tasty & Yummyy Payasam is ready to serve !!


             As it cools down, it gets thicker.... So if you want 'Drinkable' payasam, add more milk accordingly... 
You can serve hot or cold or at room temperature too...
I love it in all ways !!

10 mins Fruit Pudding/ Pazha Maanga Payasam/ Ethakka Mambazha Payasam/ Sweet Plantain(Banana) & Mango Kheer


          With the winter reaching nearer, I thought of posting a warm, simple, healthy & sweet payasam/kheer with the yummy mangoes & bananas..Sweet plantain would taste more better i feel so....They are firmer and rich in protein.... The blacker the plantain skin gets the more tasty (sweet) it turns....Even the mangoes..So more riper the fruits are...less time (as it would get roasted at a faster rate) & sugar would be required...Its an authentic Kerala dessert...

          Can be served during feasts like Onam , ceremonies, festivals or simply at home when you & your family just crave to have something sweet...This Kheer is really healthy for kids (specially babies..smash the fruits & avoid nuts & raisins for them)..as all the fruits included, are best for their growth ...Actually mixing these fruits together was just a try...Came out really well..We really enjoyed this warm sweet...specially my hubby & baby who found his favorite fruits altogether..!!


Ingredients

1.Sweet Plantain (ripe)-1 (big)/ Banana(chiquita)-2 (ripe)
2.Mango (ripe)- 1 (medium)
3.Ghee-1 1/2 tsp
4.Sugar-1 tbsp
5.Jaggery (sharkkara)/ Palm Jaggery(karipetti)- 1 tbsp (grated) [optional..can use sugar instead]
6.Cashew nuts-6 or more (Slit open the nuts)
7.Raisins-1 tbsp
8.Dates (pitted)-5 [optional]
9.Milk/ Coconut milk-2 cup
10.Water-1/4 cup [optional]
11.Semolina/ Rava- 1 tbsp (to get a thicker consistency)
12.Cardamom powder-3/4 tsp


Preparation

~Chop the mango & banana into irregular shaped small cubes. 


~Heat a saucepan & pour 1 tsp of un-melted ghee & melt it.
~Roast the nuts & raisins for 2 mins & transfer it 2 a small bowl.


~Pour rest of the un-melted ghee into the same saucepan & add the chopped mango & sweet plantain(ethakka)/banana & stir-fry them for 1 min until they start sticking to the bottom.
~Don't smash the fruits a lot...Let the small chunks be visible..
~Pour 1/4 cup water/milk & allow it to boil in medium flame.


~Now pour milk & sugar along with jaggery/palm jaggery allow it to boil perfectly.
~At this time add semolina along with cardamom powder & mix well.
~Check its sweetness & adjust sugar accordingly (if adding dates..be careful of the sweetness)...a pinch of salt can also be added to get a perfect sweetness.
~Off the flame when the required consistency is obtained.
~Add  roasted nuts along with raisins & mix well.


~Garnish with chopped dates & serve warm...some might like it cold too... In that case cool & refrigerate..
