This is a Northern Kerala (Malabar) dish..Its a delicious meat filled pastry and it usually appears on our table during the month of Ramadan... Mutton, Beef or Chicken is used for the spicy meat filling. ...These deep
fried spicy pastries is also lovely if you are going for a picnic and want to pack something from home. I was inspired by this recipe from my husbands cousin..thanks to Aisha M Safar..
Ingredients(for stuffing)
1.Chicken(any meat) -1/4 kg
2.Garam Masala-1/2 tsp
3.Onion-2(medium..chopped)
4.Green Chilly-2(slit into half & chopped)
5.Ginger(grated)-1 tbsp
6.Garlic(grated)-1 tbsp
7.Pepper-1/2 tsp
8.Coriander leaves(chopped)
9.Salt
10.Oil
Ingredients(for wrap)
11.All Purpose Flour(Maida)-6 tbsp
12.Wheat flour(Atta)-2 tbsp
13.Salt-1/4 tsp
14.Olive Oil-2 tbsp(any other oil would also do)
15.Water
Chicken Preparation
~Pressure
cooker the chicken with 1/8 tsp pepper, 1/4 tsp turmeric powder, 1/4
tsp salt & 1/2 cup water.(3 whistles might do) & let them cool...
~If boneless chicken, just tear them to small pieces..
~Else you have to de-bone them & then tear them to small pieces..
Stuffing Preparation
~Heat oil in a saucepan(kadai) & saute ginger & garlic for 2-3 mins.
~Add onions with salt & saute them.
~Add garam masala & saute for 1min.
~Now add the cooked meat & mix well & close the lid & cook for 3 mins.(keep stirring in between).
~Add pepper & check its taste & add more pepper & salt if required.
~Add pepper & check its taste & add more pepper & salt if required.
~Add coriander leaves & mix well & cook for 2mins & off the flame & let it cool.
Wrap Dough Preparation
~Mix Maida, olive oil, salt together with a spoon.
~Add water little by little to this mix & stir properly.(very little water needed)
~Then prepare the mix with your hands until you get a soft dough.
~Make small lemon size balls out of it & dust it with atta.
~Place stuffing on one chappathi & cover with another chappathi.
~Else you can place the stuffing on half of the chappathi & close it with the other half(envelopes)
~Press or roll press the edges very well to seal the stuffing.
~Now deep fry the meat stuffings in oil.
~Dip the deep fried meat stuffings into this egg mix & shallow fry it in a pan with little oil.
Final Preparation
~Flatten each ball into a small round chappathis using a chappathi roller by dusting with atta.~Place stuffing on one chappathi & cover with another chappathi.
~Else you can place the stuffing on half of the chappathi & close it with the other half(envelopes)
~Press or roll press the edges very well to seal the stuffing.
~Now deep fry the meat stuffings in oil.
Optional
~Take a bowl & beat 1 egg with 1/2 tsp sugar & 1/4 tsp cardamom powder.~Dip the deep fried meat stuffings into this egg mix & shallow fry it in a pan with little oil.
