Mini Chicken Kebabs (Fried Version)


         Kebab is traditionally made with lamb...These are mini chicken kebabs which are actually quite easy to make & without a doubt, they are exceptionally tasteful....I guarantee !!


         Most of the Chicken Kebab or Kabab recipes are skewed and grilled or tandoor variety where the chicken chunks are marinated in special spices and then grilled on skewers or cooked in tandoor....
         This is a fried version & it may not be of the authentic type...But this is a simple Indian recipe that you can serve as an appetizer or as a side dish along with chopped onions/ coriander chutney/ tomato ketchup..It just tastes heavenly..A big thanks to my mom who shared this recipe with me...She tried it out from some cookery show..Something really interesting for kids too...!!


Ingredients

1.Chicken - 1/2 kg
2.Green Chilly - 5 (slit onto half & finely chopped)
3.Egg white - of 1 egg
4.Soya sauce -1tbsp
5.Onion - 3 (medium) (finely chopped)
6.Garlic - 4 cloves (grated)
7.Ginger - 3/4 tsp (grated)
 8.Bread crumbs-5-6 tbsps
9.Coriander leaves - 1 tbsp (nicely chopped)
10.Cumin seeds powder-1/2 tsp (optional)
11.Salt - as reqd


Preparation

~Slice the chicken into small pieces & de-bone them.


~Grind these slices into a thick paste. (need not grind for long)


~Into this chicken paste add chopped green chilly, grated garlic & ginger, chopped onions, soya sauce, egg white (only half of egg white would be required) chopped coriander leaves, cumin seeds powder & mix well with a spoon.
~Now give a taste & add required amount of salt & can increase the green chilly too..
~Add the breadcrumbs & combine well with your hands.


~Refrigerate this mix at least for half an hour. (or freeze for 15 mins)
~If its really very sticky add more of bread crumbs to adjust.
~Now make the shapes of mini kebabs & just deep fry them..


In the below two images the kebabs are prepared by my mom..More perfect shapes..you can see the difference.....!!
