Beetroot...Something which I couldn't really accept in a sweet dish..Decided to prepare this red sweety when I saw this recipe in my facebook friends page by Ummu Salma...Never ever thought it would turn out this perfect & the taste of beetroot had a different touch too... The below pic was taken just after preparation...You'll get more better perfect shapes after cooling..
Beetroot is a super-storehouse of both vitamin C and iron, which is packed with good news for your body.... It is included with extra vitamin C and this vitamin helps increase iron absorbtion which enhances the production of the body’s natural mood-lifter & reduces your blood pressure too..... So it would seem that munching fresh beetroot can literally make you smile !!
This kesari's color is soo tempting that anyone would want to taste...Once you taste you will look for more.......
Ingredients
2.Rava (Semolina/Sooji) -1 cup
3.Ghee-5 heaped tbsp (un-melted)
4. Sugar-1 cup
5.Milk-1/2 cup
6.Water-1 1/2 cup
7.Cashew nuts-6-10 (slit into two)
8.Raisins-2 tbsp
9.Rose water-2-3 tbsp
10.Cardamom powder-1 tsp
Preparation
~Heat 3 tbsp on ghee in a non-stick pot on low flame.
~Cook for 2-3 mins (till the sugar dissolves & reaches a semi-halwa state)
~Meanwhile roast nuts & raisins in 2 tbsp ghee & keep aside (along with the ghee)
~Open the lid & stir.
~When the kesari starts hardening stir vigorously & add the roasted ghee with nuts & raisins,rose water & cardamom powder.
~Cook till it reaches the kesari state (until when it becomes hard for you to stir..)
~Cool it to room temperature & refrigerate before use.
~Now cut it into desired shapes & serve.
