Have to admit...This is something really interesting from which i have prepared the recent days...It looks really beautiful & smells heavenly too...Its an eye-catching snack, something which you really want for an Iftar party as well....When you give a munch, a soft texture of bun filled with spicy & yummy chicken masala...Isn't that just what you want !!
I never used to try such dishes, since I don't use an oven. It just remained as a wish. This Ramadan, took a risk & prepared this in my pressure cooker & it was a grand success...Any doubts, you can ask me...The recipe courtesy goes Saneeba Rafiq of Sisters Cuisine... A big thanks to her for this wonderful mouth watering recipe...I made for only half the quantity mentioned below & made 5 buns of the below size....My very first attempt with buns...Atlast !!!!!
I gave a try to a different shape too...I think its call braided...Couldn't take its preparation pics as I was in hush bush before the Iftar...
2. Egg - 1 (beaten)
3. Yeast - 1 tbsp
4. Sugar - 2 tbsp
5. Salt - 1 tsp
6. Ghee/Butter/Oil - 1/4 cup
7. Lukewarm milk - 1 cup
8. Egg white - 1 (egg wash)
9. White Sesame seeds (vella ellu) - for ganishing
11. Onion - 4 (medium...chopped)
12. Green chilly - 4 (slit into halves & chopped)
13. Ginger - 1/2 tbsp (grated/chopped/paste)
14. Garlic - 1/2 tbsp (grated/chopped/paste)
15. Curry leaves - 2 springs (chopped)
16. Coriander leaves - 2 tbsp (chopped)
17. Pepper - 1 tsp (according to spice reqd.)
18. Garam masala - 1 tsp
19. Carrot - 1/3 cup (chopped)
20. Capsicum - 1/3 cup (chopped)
21. Tomato ketchup - 2 tbsp
22. Oil - 4 tbsp
23. Salt - as reqd.
24. Cinnamon sticks - 4
~Keep aside for 10 minutes until when it doubles.
~Take 1 cup maida in a bowl & make a well in the centre.
~Pour milk, butter, salt, sugar & mix well.
~Add the beaten egg along with the yeast mix.
~Add the rest of the maida & combine well into a soft dough. (can use little milk/maida if required for kneading)
~Knead well for 5 minutes & keep aside for 1 or 2 hours.
~De-bone them & shred them to pieces & keep aside.
~Heat oil in a wok & add cinnamon sticks.
~Saute ginger, garlic, green chilly for 1 minute.
~Saute onions until translucent.
~Add salt, curry leaves, coriander leaves.
~Add all the powders.
~Add shredded chicken along with chopped carrot & capsicum & cook for 5 minutes in medium flame.
~Make balls out of it & roll it out.
~Keep the filling on one side (try adding more filling) & close it. (keeping some space below as shown in the figure below)
~Make cuts in the below space with a knife.
~Pull the cuts towards the covered dough & bend the whole bun towards you from the side to get the shape.
~Apply egg wash on all sides of the bun.
~Keep inside a tin inside a pressure cooker for 20 minutes in low flame without weight on.
~Or bake for 10 to 15 minutes in a preheated oven.
~Do not keep them stuck to each other...Keep a small space as the bun will rise.
~Until you can see the bun turining slighly brown.
Enjoy your snack....Fill your tummy this Ramadan with these..

Then place the prepared bun inside the tin n den keep the tin inside d cooker over the tin lid inside...Hope i have not confused u...
