Now this is wonderful Indian French toast..which is completely vegetarian...My own experiment...Im a person very fond of sweet french toasts....Later I discovered Sweet n Spicy French Toasts which was a grand success...But found that most of my veggie friends couldn't give it a try since the main ingredient of French toasts is "Egg"...So was in a thought to make the batter eggless & found bananas as the best option.....
The batter is a mixture of mashed bananas & coconut milk with a perfect aroma of cardamom powder...topped with a sweet syrup of coconut & jaggery...Just loved the new combo..Give it a try..
Ingredients (for toast)
1.Bread-6 to 10 slices
2.Coconut milk (thick)-1/4 cup
3.Milk/Coconut milk-1/4 cup (optional)
4.Banana-2 (peeled & mashed)
5.Sugar-2 tbsp
6.Turmeric powder-1/2 tsp
7.Ghee/Butter- to toast
8.Cardamom powder-1 or 1 1/2 tsp
Ingredients (for syrup)
9.Coconut (grated)-5 to 6 tbsp10.Jaggery (sharkara) /Palm Jaggery (karipetti)-3 to 4 tbsp (grated/melted)
11.Ghee-2 tsp
Preparation (of toast)
~Blend mashed bananas, coconut milk, milk,sugar, turmeric powder & cardamom powder into a smooth batter.
~If using sweet plantains (ethakka), boil or steam cook them little ..then mash & add it to blender.
~Slice bread into triangular shapes.
~Heat & grease a non-stick fry pan with very little ghee/butter in medium flame.
~Dip each bread slice into the banana batter & coat it well & place it on the fry pan. (repeat)
~Don't overcrowd the fry pan.
~Flip over when one side done..(careful step)
~Once golden brown...Shift them to a serving plate.
~Can slice them into more small triangles.
Preparation (of syrup)
~Heat gently on low heat a small sauce pan with ghee.~Add jaggery/palm jaggery & coconut into this & mix well.
~Stir cook till the gravy thickens into a syrup after a boil.
~Remove from heat & spread this coconut syrup thickly on top of each toasted banana bread slices.
