Chicken Pizza Homemade (Indian Style)



             Here's a simple method for making homemade pizza.. You can  make this pizza  from scratch too...if you have  a little of yesterdays leftover chicken curry (any type) in your refrigerator, just use it as your topping along with other ingredients..This pizza has a perfect thin base which can be cooked in a fry pan...with a good amount of flavor infused throughout...

            Actually, when i got this recipe from my high school friend Lekshmi Bonick, i never expected a success, especially about the base of the pizza...but to my amazement this was a total hit among my friends & family...A big thanks to Lekshmi...
   Give this mouthwatering  pizza a try next time you need to feed a hungry crowd..or your small family..

 

Ingredients (for topping)

1.Chicken-1/2 kg
2.Onion-2 (medium..finely chopped)
3.Ginger (grated)-1 tsp
4.Garlic (grated)-1 tsp
5.Green chilly-2 (slit into half horizontally & chop finely)
6.Chilly powder-1 tsp
7.Turmeric powder-1/4 tsp
8.Salt-1/4 tsp
9.Soya sauce-1 tbsp
10.Oil-2 tbsp
11.Egg- 1 (lightly beaten)
12.Double cream-2 tbsp/ Milk-4 tbsp
13.Coriander leaves (chopped)- 1 tbsp
14.Coriander powder-1/2 tsp
15.Carrot (grated)- 3 whole tbsps
16.Potato (grated)-3 whole tbsps




Ingredients (for base)

17.All Purpose Flour (maida)-1 cup
18.Water- 1 1/2 cup
19.Salt-1/4 tsp

Preparation (of chicken)

~Cook chicken in pressure cooker with 1 cup water  & chilly powder, turmeric powder, salt & soya sauce. (3 whistles)
~Keep aside 4 tbsp of the stock  (water of the cooked chicken)
~Let it cool & shred them..not into very thin pieces.


~Else you can use 3 to 4 pieces from any chicken curry you have at home along with 4 tbsp of its gravy too..
~I have tried that too...its equally tasty..Just no need to add coriander powder...


Preparation (of topping)

~Heat oil in a kadai & saute ginger & garlic for 1min.
~Now add chopped onions with salt & saute till transparent.
~Add green chilly & saute for 1 min.
~Add carrot & potato & mix well & cook for 3 mins (stir occasionally)
~Add the shredded chicken & mix well.
~Add the stock or the gravy from chicken curry.
~If using stock add coriander powder.
~Check the salt & spice & adjust salt & chilly powder accordingly..
~Add coriander leaves & cook for 1 min & remove from flame.


Preparation (of base)

~Mix maida, water & salt into a thick batter in a bowl.


~If you don't have double cream at home just use milk instead.
~Just boil milk in a saucepan for a longer time so that it becomes little thicker...it turns to 2 tbsp.

~In another bowl crack the egg along with double cream/prepared milk with salt & beat lightly& keep aside.

Preparation (of pizza)

~Heat a non-stick fry pan.
~Pour maida mix carefully into the centre of the pan into a medium round structure.
~The maida mix will spread itself when poured.
~Cook one side in medium flame for 2 mins & flip over.
~Now reduce the flame & pour 1 tsp of egg mix over the cooked part & spread it evenly with a spoon.
~Add required amount of chicken topping on top of this evenly.
~Again add 1/2 tsp of egg mix on top of the chicken mix & cook for 1 or 2 mins.
~Transfer carefully the cooked pizza to a serving plate.

~Top the pizza with little olive oil & tomato ketchup..
~Can also top it with sliced capsicum & grated cheese..
~Cut it into 4 pieces & serve..

Chicken Stuffed Paratha



           Chicken lovers love to have chicken in their every meal.... This stuffed parathas are ideal as a snack & for dinner parties ....

           Paratha is an important part of a traditional Indian breakfast made with flour.... This is made with maida & yoghurt and stuffed with chicken and egg mixture...Just refrigerate it if there are more & can be used reheated..Stays longer..

           This recipe is from my mom...i used to love having this...& still do...even we used to take this in our lunch box to school...wont even dirty our hands....Used to feel really happy sharing to my friends & hear their  wow's...

         In September 2012, i won second prize for sharing this wonderful recipe in an online cooking competition held in a group called "Ammachiyude adukkala" in facebook..

        I think that was the first time ever i was congratulated by many for my cooking & explanation skills...Many did try this dish after that &  got very good results..


Ingredients (for dough)

1. All Purpose Flour (maida)- 3 cups
2.Yoghurt-1 whole tbsp
3.Sugar-1 tbsp

4.Ghee/Dalda (melted)-2 tbsp
5.Egg (lightly beaten)-
1
6.Milk-3 or 4 tbsp ( as much as required to prepare the dough)
7.Salt-1/2 tsp
8. Olive oil (or any other oil)-1 tbsp


Ingredients (for stuffing)

9.Chicken-1/2 kg
10.Onion (medium)-3 (chopped finely)
11.Ginger (grated)-1 tsp
12.Garlic (grated)-2 tsp
13.Green chilly -2 (slit into half length-wise then chopped finely)
14.Egg-1 (boiled & crumbled)
15.Tomato -1 (medium..chopped finely)
16.Pepper-1/2 or 3/4 tbsp
17.Chilly powder-1/4 tbsp
18.Salt-1/4 tbsp
19.Sugar-1/4 tbsp
20.Coriander powder-1/4 tbsp
21.Milk-4 tbsp
22.Coriander leaves(chopped)-2 tbsp
23.Garam masala-1/2 tsp


Ingredients (for chicken fry)

24.Chilly powder-1/2 tbsp
25.Pepper-1/2 tbsp
26.Salt-1/4 tbsp
27.Fennel seeds powder-1/2 tsp
28.Coriander powder-1/4 tbsp
29.Olive oil-1/2 tsp


Preparation (of dough)

~Mix all the ingredients for the dough in a vessel with a spoon.
~Then mix properly with your hands until the dough becomes smooth. 
~Now cover the dough with a wet & very clean cloth.
~Leave it for at least 4 hrs or more.


Preparation (of chicken & egg)

~Mix the ingredients for the fry & prepare it into a thick paste & paste it on washed & dried chicken.
~Shallow fry the chicken & let it cool.
~Shred them into pieces & grind the chicken (need not make it a paste)
~Boil the egg in water & little salt for 15 mins in high flame.
~Cool the egg & de-shell it & crumble it.
 

Preparation (of stuffing)

~Heat 2 tbsp oil in a kadai & saute chopped onions in it with salt.
~Add ginger,garlic & green chilly & saute for 2 mins.
~Add tomato & saute till mushy.
~Add pepper, chilly powder, coriander powder, sugar, garam masala & mix well.
~Add crumbled egg & grinded chicken with coriander leaves & mix well.
~Check salt & spice & adjust salt & pepper.
~Cook for 3-4 mins (stir occasionally) & remove from flame.


Preparation (of paratha)

~Make balls out of the prepared dough & dust it with maida.
~Roll out the ball flattened into a large circle.. dust with maida if required.

~Add the prepared stuffing on top of the flattened dough as shown above.
~Close the paratha together & press with your hands & roll on top slowly, so that the paratha dosen't tear.
~Heat a fry pan & place the paratha & fry by pouring 1/2 tsp oil on its sides.
~Keep it in medium flame.

~Turn it around after 1 min & pour little more oil in its sides.
~Once turned, start pressing on top of the paratha gently on all sides so that its cooked evenly.
~Remove from flame when both sides are cooked enough.
~Repeat roasting until all parathas are made. 
 
Tasty & Yummy chicken stuffed parathas are ready.....
!!!

Serve with tomato ketchup & with fresh vegetable salad...

Egg Curry (with Coconut & Green Chilly)/ Kerala Mutta Curry


            This is a delicious egg curry with coconut & its spiciness comes from green chillies.. All these along with an egg cracked into the curry makes it a delightful gravy that smoothers in your tongue with goodness.....It goes well with appam, porotta or bread at breakfast or as dinner...
 

Ingredients

1.Eggs-3 (according to number of people to eat..upto 4)
2.Coconut (grated)-1 cup
3.Green chilly-3 & 1/2
4.Fennel seeds powder-3/4 tsp
5.Coriander powder-1 tbsp
6.Turmeric powder-1/4 tsp
7.Onion (large)-2 (finely sliced)
8.Cardamom powder-1/2 tsp / cardamom -1
9.Cinnamon (patta)-1 small piece
10.Clove (grambu)- 2
11.Tomato (small)-1(chopped)
12.Ginger (grated)- 1/2 tsp
13.Garlic (grated)- 1 tsp
14.Coriander leaves (chopped)-1 tbsp
15.Garam masala- 1/2 tsp


Preparation

~Grind coconut, fennel seeds powder,green chilly (2 1/2), coriander powder to a smooth paste.
~Blend this coconut mix with turmeric powder & 1/2 or 3/4th cup water & keep aside.
~Heat oil in a kadai.
~Add cardamom/ cardomom powder, cinnamon & cloves & stir fry for 1 min.
~Add ginger, garlic & 1  green chilly (slit into half) & fry for 2-3 mins in medium heat.
~Add sliced onions with salt & saute till transparent.
~Add tomato & saute till mushy.
~Add the blended coconut gravy into this & mix well.
~Add coriander leaves & garam masala & close the lid & cook for sometime (stir occasionally)
~Add more water if required. (optional)
~When cooked crack one egg into this & stir well & cook for 2 mins & remove from flame.
~Boil rest of the eggs in water & little salt in high flame for 15 mins.
~De-shell the eggs when cold & add into this curry & mix well & serve.

Spicy Egg curry ready to serve..!!!

The Golden Phoenix

Most Expensive Cupcake in the World...Its made of edible Gold....

         This pricey dessert costs a whopping £645 ($1,000) at Dubai’s Bloomsbury’s Cupcakes....
        Served on a covered Villari 24-carat gold empire cake stand, the cupcake is adorned with edible gold and chocolate.... It's available at the new Bloomsbury’s location in the Dubai Mall.

          In June 2012, Bloomsbury cupcake founder Shafeena Yusuff Ali announced she wanted to create the pricey dessert.  It took her five weeks to develop the dish.
        Twitter backlash ensued after unveiling the dish.  Negative tweets like “it’s not impressive. Sorry, but this is how I feel. And well caviar isn’t 1 of the ingredients” and “I would just think that this money could be used for a better cause than obesity. But this is purely my belief,” were some of the responses.
      Ali tweeted her response “sorry you feel that way! I was making an honest effort to create something amazing!”

Egg Potato Sandwich (Easy & Healthy)


         Nothing says “lunch” like a tasty sandwich for our kids, with  a quick and healthy recipe delivered with a traditional touch and some freshness...In the hurry burry to pack a lunch or as an evening snack its a great confusion as to what to preapre which has to be tasty as well as healthy too...

Ingredients

1.Eggs-2
2.Potato-1 small
3.Onion-1 small (chopped finely)
4.Chilly powder-1/4 tsp
5.Salt-1/2 tsp
6.Lemon juice-1 tbsp
7.Yoghurt-2 tbsp
8.Coriander leaves (chopped finely)
9.Turmeric powder-1/4 tsp
10.Pepper- 1/4 tsp
11.Tomato ketchup-1 tbsp
12.Tomato-1 small(chopped finely)
13.Garam masala-1/2 tsp
14.Bun/ Bread


Preparation (of ingredients)

~Mix chilly powder with yoghurt & keep separately.
~Boil the eggs in water & little salt for 15 mins in high flame.
~Along with eggs add the small potato without peeling its skin to get boiled for  25 mins.
~Remove only the eggs from flame & pour cold water on top of it & let it cool.
~De-shell the eggs & crumble them with your hands.
~When the potatoes are cooked off the flame & pour cold water on top & let it cool.
~Peel the skin of the potato & crumble it too & keep aside seperately..

 

Preparation (of sandwich)

~Take a bowl & add crumbled eggs along with chopped onion, tomato, salt, coriander leaves,turmeric powder, garam masala, lemon juice & little of the crumbled potato & pepper according to your taste.



~Mix well with your hands.
~Potato is just used to make the mix mushy..add more potato if required.
~Cut the bun into two pieces from the center so you can fill the mix inside.
~Spread the yoghurt mix on one side of the bun.
~Spread tomato ketchup on the other side.
~Top one slice with the mix & close the bun with the other slice & press firmly the closed bun with your hands.
(Don't over fill the bun)
~Heat 1/2 tsp ghee or cooking oil  in a non-stick fry pan.
~Place the filled bun on it & cook both sides for 2 mins in low flame.

Can avoid eggs if you need it be completely vegetarian & can use cooked & crumbled paneer instead.

French Bread Toast (Sweet & Spicy)


         French Toasts are just an easy and amazingly quick option for evening snacks.... Its called Pain Perdu in French...which means "lost bread" .... It is called "lost bread" because it is a way to reclaim stale or "lost" bread.... The hard bread is softened by dipping in a mixture of milk and eggs, and then fried....

         There are days when we want something sweet, we have the traditional Sweet French Toast or there are days when we need that spicy kick we go for Spicy French Toasts... 

         The sweet toast brings me loads of memories from my childhood...my mom used to prepare this delicious toast often for our evening snacks... the aroma of this toasted bread makes us hungry while entering after a long day at school..

         I have got a new recipe from a facebook friend of mine with is both sweet & spicy...Its enhanced taste really melts in your tongue...It was a different experience...


 Ingredients

1.Bread slices-10
2.Eggs-2
3.Milk-1/2 cup
4.Sugar-2 tbsp
5.Cumin seeds powder-1 tsp
6.Chilly powder-1/2 tsp or more according to the spice you need
7.Ghee- to toast the bread slices


Preparation

~Slice each bread piece diagonally to triangular shapes.
~Take a bowl & add eggs, milk, sugar, cumin seeds powder, chilly powder.
~Beat this egg mix finely.
~Heat 1 tsp ghee in a non-stick fry pan.
~Dip each sliced bread into the egg batter & place onto the fry pan.(one slice at a time)
~Do not overcoat the bread..bread might break..



~These slices of egg-coated bread are fried on both sides until they are browned and cooked through.
~Don't let it burn.
~Day-old bread is often recommended by chefs because the stale bread will soak up more egg mixture without falling apart.
~Serve this french toast topped with little honey or sprinkled with sugar..as you wish...
~I have used honey here.
