Caterpillar Chicken Buns (In pressure cooker)- Iftar Special !!

           Have to admit...This is something really interesting from which i have prepared the recent days...It looks really beautiful & smells heavenly too...Its an eye-catching snack, something which you really want for an Iftar party as well....When you give a munch, a soft texture of bun filled with spicy & yummy chicken masala...Isn't that just what you want !!
 

           I never used to try such dishes, since I don't use an oven. It just remained as a wish. This Ramadan, took a risk & prepared this in my pressure cooker & it was a grand success...Any doubts, you can ask me...The recipe courtesy goes Saneeba Rafiq of Sisters Cuisine... A big thanks to her for this wonderful mouth watering recipe...I made for only half the quantity mentioned below & made 5 buns of the below size....My very first attempt with buns...Atlast !!!!!


                
                  I gave a try to a different shape too...I think its call braided...Couldn't take its preparation pics as I was in hush bush before the Iftar...


Ingredients (for dough)

1. All Purpose Flour (Maida) - 2 1/2 cup
2. Egg - 1 (beaten)
3. Yeast - 1 tbsp
4. Sugar - 2 tbsp
5. Salt - 1 tsp
6. Ghee/Butter/Oil - 1/4 cup
7. Lukewarm milk - 1 cup
8. Egg white - 1 (egg wash)
9. White Sesame seeds (vella ellu) - for ganishing


Ingredients (for filling)

10. Chicken - 500 gm
11. Onion - 4 (medium...chopped)
12. Green chilly - 4 (slit into halves & chopped)
13. Ginger - 1/2 tbsp (grated/chopped/paste)
14. Garlic - 1/2 tbsp (grated/chopped/paste)
15. Curry leaves - 2 springs (chopped)
16. Coriander leaves - 2 tbsp (chopped)
17. Pepper - 1 tsp (according to spice reqd.)
18. Garam masala - 1 tsp
19. Carrot - 1/3 cup (chopped)
20. Capsicum - 1/3 cup (chopped)
21. Tomato ketchup - 2 tbsp
22. Oil - 4 tbsp
23. Salt - as reqd.
24. Cinnamon sticks - 4


Preparation  (of dough)

~Dissolve yeast in 2 tbsp warm water along with 1/2 tbsp sugar & 1/2 tbsp maida.
~Keep aside for 10 minutes until when it doubles.

~Take 1 cup maida in a bowl & make a well in the centre.
~Pour milk, butter, salt, sugar & mix well.
~Add the beaten egg along with the yeast mix.
~Add the rest of the maida & combine well into a soft dough. (can use little milk/maida if required for kneading)
~Knead well for 5 minutes & keep aside for 1 or 2 hours.


Preparation (of filling)

~Cook chicken with little pepper, salt & water.
~De-bone them & shred them to pieces & keep aside.
~Heat oil in a wok & add cinnamon sticks.
~Saute ginger, garlic, green chilly for 1 minute.
~Saute onions until translucent.
~Add salt, curry leaves, coriander leaves.
~Add all the powders.
~Add shredded chicken along with chopped carrot & capsicum & cook for 5 minutes in medium flame.


Preparations (of buns)

~ Knead the dough once more & make it soft.
~Make balls out of it & roll it out.
~Keep the filling on one side (try adding more filling) & close it. (keeping some space below as shown in the figure below)
~Make cuts in the below space with a knife.
~Pull the cuts towards the covered dough & bend the whole bun towards you from the side to get the shape.


~Apply egg wash on all sides of the bun. 
~Keep inside a tin inside a pressure cooker for 20 minutes in low flame without weight on.
~Or bake for 10 to 15 minutes in a preheated oven.
~Do not keep them stuck to each other...Keep a small space as the bun will rise.
~Until you can see the bun turining slighly brown.

Banana Coconut Bread Toast


         Now this is wonderful Indian French toast..which is completely vegetarian...My own experiment...Im a person very fond of sweet french toasts....Later I discovered Sweet n Spicy French Toasts which was a grand success...But found that most of my veggie friends couldn't give it a try since the main ingredient of French toasts is "Egg"...So was in a thought to make the batter eggless & found bananas as the best option.....

           The batter is a mixture of mashed bananas & coconut milk with a perfect aroma of cardamom powder...topped with a sweet syrup of coconut & jaggery...Just loved the new combo..Give it a try..

Ingredients (for toast)
1.Bread-6 to 10 slices
2.Coconut milk (thick)-1/4 cup
3.Milk/Coconut milk-1/4 cup (optional)
4.Banana-2 (peeled & mashed)
5.Sugar-2 tbsp
6.Turmeric powder-1/2 tsp
7.Ghee/Butter- to toast
8.Cardamom powder-1 or 1 1/2 tsp

Ingredients (for syrup)

9.Coconut (grated)-5 to 6 tbsp
10.Jaggery (sharkara) /Palm Jaggery (karipetti)-3 to 4 tbsp (grated/melted)
11.Ghee-2 tsp


Preparation (of toast)

 

~Blend mashed bananas, coconut milk, milk,sugar, turmeric powder & cardamom powder into a smooth batter.


~If using sweet plantains (ethakka), boil or steam cook them little ..then mash & add it to blender.
~Slice bread into triangular shapes.


~Heat & grease a non-stick fry pan with very little ghee/butter in medium flame.
~Dip each bread slice into the banana batter & coat it well & place it on the fry pan. (repeat)



~Don't overcrowd the fry pan.
~Flip over when one side done..(careful step)


~Once golden brown...Shift them to a serving plate.


~Can slice them into more small triangles.


Preparation (of syrup)

~Heat gently on low heat a small sauce pan with ghee.
~Add jaggery/palm jaggery & coconut into this & mix well.
~Stir cook till the gravy thickens into a syrup after a boil.


~Remove from heat & spread this coconut syrup thickly on top of each toasted banana bread slices.

Yum Yum yummyyyy...Fruity toasts...:)

Bread Pudding / Bread Kinnathappam


          
          Kinnathappam  is a very popular traditional dessert of Kerala & TamilNadu..."Kinnam" means plate & "appam" here means the pudding....so its a type of steamed sweet pudding prepared in plate or vessel...It's mostly enjoyed by the Muslim population & its ingredients just keep varying..

          Here, i have bread as the main ingredient & it takes much less effort & time to prepare than the original kinnathappam (really tedious..but worth the effort...)....This recipe of mine results in a  really delicate, soft, slightly wiggly, mouthwatering delicacy which tastes so good just melting your taste buds...Its a dessert  made from a few common kitchen ingredients....& designed with nuts & raisins which are drizzled with honey....!!

Ingredients

1.Bread slices-8
2.Egg-1
3.Coconut milk/Milk-3/4 cup
4.Sugar-4 to 5 tbsp (if its sweet bread you will need only less)
5.Vanilla essence-1/2 tsp
6.Rice powder- 1 tbsp (optional)
7.Cashew nuts-6-7(slit them into 2 halves)
8.Raisins-1 tbsp
9.Honey-1 tsp


Preparation (of batter)

~Slice the crusts (brown sides) off the bread pieces.



~Crack an egg into the blender.
~Shred the bread pieces into the blender.
~Now pour the milk on top of the bread pieces to the blender along with sugar,rice powder & vanilla essence.
~Can use coconut milk or normal milk or a mixture of both..but not more than 3/4 cup..the pudding will become loose if more..
~Now blend them into a smooth paste & keep aside.


Preparation (of pudding)


~Can cook this pudding in pressure cooker or an idli cooker.(similar results)
~In pressure cooker..you have to use a vessel & if in an idli cooker use a thali(a steel plate with sides looking like a tray)
~Pour water in the idli cooker or pressure cooker.(steam cooking)
~Place a steel plate/ lid / small steel vessel inside the cooker.(any one)
~Pour 1 tsp ghee into the steel plate or vessel in which your going to cook the pudding.
~Heat this plate for 1min & swirl the ghee to all sides of the plate.
~Place this plate/vessel which is already heated carefully into the cooker.
~Now the pour the batter into the vessel.



~Water should not reach more than half of the vessel containing the mix...
~Make sure while boiling, the water wont get inside the mixture ...
~Also water should not get dried up..

~If using a pressure cooker,close it & no need to put the weight. 
~If using idli cooker you can cover it.
~It takes 20- 25 mins....for the pudding to get cooked....after 10 mins of cooking, just decorate the pudding if wish..

Preparation (of decoration) 

~Heat 1/2 tsp of ghee/oil in a saucepan.
~Roast nuts & raisins for 2 mins in medium flame.
~Pour honey to this nuts combination & mix well & off the flame.


~Cook the pudding for 10 mins in high flame..
~Reduce the flame till you decorate it..
~Now open the cooker (whichever it is) & place each nuts & raisins with a gentle press with your spoon in a decorative way(your taste) on the pudding .


~Close the lid & increase the flame.
~Cook for 10-15 mins more..Open & check in between whether its cooked.
~Once cooked, off the flame, open the lid & let it cool. 
~When cooled, remove the vessel & slice it (needs little care)& serve..

Easy, yummy & a perfect mouth-melting pudding is readyy  !!!

Bread Egg Scrambles (Indian Style)


         Here is an easy breakfast or a tasty evening snack for my dear friends...This snack is attractive since bread & eggs are together with our wonderful Indian spices, making it a real meal in one...After preparing this, its path from frying pan to plate then from your fork/spoon to your tongue where it melts to your belly is as short as possible.....They will have just a short lifespan...Just try preparing it & you'll know it better & let me know it too...A big thanks to Lekshmi Bonick who shared this recipe with me..:-) 

Ingredients

1.Onion -3 (medium) (chopped finely)
2.Bread -2 or 3 slices
3.Eggs-2
4.Tomato-1 (medium) (chopped)
5.Chilly powder-1 tsp
6.Green chilly-1 (slit length-wise & chopped finely)
7.Pepper-1/4 tsp
8.Garam masala-1 tsp
9.Coriander powder-1/2 tsp
10.Ghee
11.Oil- 1 tbsp
12.Salt -according to taste
13.Coriander leaves- to garnish

Preparation

~Slice bread  into small rectangular cubes.


~Heat 1 tbsp oil with 1 tsp ghee in a saucepan.
~Saute chopped onions with 1/2 tsp salt until transparent.
~Add tomato saute till they become mushy.


~Add green chilly with pepper & chilly powder & mix well & cook for 1 min.
~Now add eggs one by one & stir (whisk) well ...the eggs will get crumbled.
~Add garam masala to this with 1 tsp or 1/2 tsp ghee according to your choice to make it smooth.
~Check & adjust salt & chilly powder according to your taste.


~Add the sliced bread pieces to this & mix well.
~Cook for 5 to 6 mins in low flame with the lid (stir occasionally).

 
~Remove from flame & garnish with coriander leaves.

Spicy bread egg scrambles are ready to fill your tummy !!!

Sweet Bread Balls (Quick & Instant)


            These balls are really unique and tastes great and very easy to prepare as well....  It is a recipe for starters & even kids can prepare it (frying part only for grown ups)......if you have all the ingredients ready with you..only 10 mins would take to prepare & serve this to your guests...easy to fry too...won't take much of your time...

      Atleast try this once & let me know the results...I'm sure this would become one of a special sweet of yours in your cooking menu ..these are delightful, semi-crunchy snacks that the kids will absolutely adore..It can be served as a simple Evening sweet snack item...


Ingredients

1.Bread slices-5
2.Coconut (grated)-1/2 cup
3.Egg-1/ Milk- required to make a soft dough (use milk only if you don't want to use an egg)
4.Sugar-1 1/4 tbsp
5.Cardamom powder-1/4 tsp
6.Oil- for frying


Preparation


~Remove the crusts(brown sides) of each bread.

~Shred each bread into small pieces with your fingers.



~Crack an egg into it along with sugar, coconut & cardamom powder. (use milk instead of egg if you want it completely vegetarian)




~Mix all the ingredients together with your hands & make it into a smooth dough.

~Make small balls out of it & keep it a plate.



~Heat oil in a kadai (deep bottomed vessel) & deep fry these balls until golden brown  in medium heat.

 

~Turn the balls faster as it fries at a faster rate..
~Don't burn these sweet easy balls.

Very easy & tasty bread jamuns are ready !!!

Paneer Bread Rolls

         This delicious paneer mix rolled in flattened bread is a very easy recipe & something  really interesting as a lunch-box items for kids or for hungry school returned kids as an after school snack...they will definitely love it...Just adjust the spice according to your kids interest....This is an easy to handle & a healthy & tasty tummy filler snack.... 

          You can also amaze your guests with an appetizer that hardly took more than 30 mins to prepare...even to those who are not interested in vegetarian or paneer dishes...My hubby was really inspired with the use of bread as the rolls...Just give it a try..

Ingredients

1.Paneer (Indian cottage cheese)-150 gm (herei used frozen paneer)
2.Potato-1 (small)
3.Onion-1 (medium)
4.Garlic (grated)-1 tsp
5.Semolina (rava)-1 tsp
6.Cornflour- 1 tsp
7.Garam masala-1/2 tsp
8.Chilly powder-3/4 tsp
9.Salt-1/2 tsp
10.Corinader leaves(chopped)-1 tbsp
11.Yoghurt- 1 tsp
12.Tomato ketchup-1 or 2 tsp
13.Ghee- to toast the bread
14.Bread slices

Preparation (of paneer filling)

~Since i used frozen paneer, i just soaked it in water for 5 mins & it was ready to use.
~ Now crumble the paneer with your hands & keep it aside.
~Meanwhile boil the washed potato in water & little salt along with its skin for about 20- 25 mins in high flame.(You can also pressure cook the potato(3 whistles) which is time saving)
~Cool it & peel it skin & crumble it also.


~Heat 2 tbsp oil in a kadai & saute ginger & garlic for 1 min.
~Now add chopped onion with salt & saute till they become transparent.
~Add paneer & potato & mix well.
~Add semolina, cornflour, chilly powder, garam masala, yoghurt, tomato ketchup & mix well & cook for 3-4 mins in medium flame (stir occasionally)
~If you feel its very dry, you can add 1 tbsp of milk(optional)
~Check its taste & adjust salt, chilly powder & tomato ketchup accordingly.
~Remove from flame & let it cool.


 Preparation (of rolls)

~Roll out each slice of bread as thin as you can.


~Now carefully remove the crusts from the sides of your bread with a sharp knife.


~Place little filling (according to the size of your bread slice) on one end of the rolled out bread slice.

  
~Gently roll in from one end, making sure that the filling stays well within the first turn of the roll. 
~Just wet your finger tips with water & press the length-wise end after rolling the bread. (Don't wet so much) 


~Repeat the same with the remaining bread slices.



~Heat a non-stick fry pan & spread little ghee/dalda/butter over it.
~Place the rolls on the fry pan.


~Lightly roast in a pan until both sides are browned in medium flame.
~Just press on top of the rolls once flipped so that its easily cooked.

Yummy Easy Healthy Rolls are readyyy  to enter your tummyy !!!




Its really a delight to make and a delight to eat...
Just cant resist from having more...!!
