Spicy Indian Chicken Curry


                        Always wish to try and give a new taste to our normal chicken curries.. Just passed through this recipe posted by one of the members 'Princy Eby' of  'Ammachiyude Adukkala'(a famous group in facebook). Her picture also was perfect to make us feel to try out this dish. I think even the preparation was interesting as there were many steps to be incorporated together. Do each thing differently and just add it together and cook for sometime. It is an easy process.




                       However the process is, the flavor was just amazing. Even while I was cooking, it I felt sure about the taste as the aroma had that guarantee ! The freshness of  garam masala, the pureed tomatoes & the semi fried chickens which were just so adorable. Do take the same amount of all ingredients please. Let's see how it goes..

                       For a party night, do prepare this different chicken curry and make them ask you the recipe. You will feel delighted ... I know that feeling ... So who wants my favorite leg piece..?



Ingredients (to roast and grind)

1. Cardamom/Elakka/Elaichi - 4
2. Cloves/ Grambu - 4
3. Cinnamon/ Patta -3
4. Fennel seeds/ perum jeerakam - 1 tsp


Ingredients (to make masala paste)

5. Garlic - 3 pods
6. Ginger - 1 tbsp (chopped)
7. Turmeric powder- 1tsp
8. Coriander powder - 3 tbsp
9. Chilly powder - 1 1/2 tbsp


Ingredients (to marinate chicken)

10. Chicken - 1 kg
11. Salt - 1 tsp
12. Turmeric powder - 1 tsp
13. Freshly squeezed lemon juice - of 1 lemon


Ingredients

14. Tomato - 3 (big)
15. Onion - 3 (big)
16. Nuts - 25 - 30 
17. Coriander leaves - 1 tbsp (chopped)

Preparation (of different process invloved)

~Marinate chicken pieces with salt, turmeric powder & lemon juice for atleast one hour.


~Meanwhile slightly roast the garam masala ingredients from 1 to 4 & grind them to a powder and keep aside.


~Cut tomatoes into two pieces each & cook it with 1 cup water until they become mushy enough. (press with spoon in between. Cook with closed lid)
~Let the mushy tomatoes cool & remove the skin with your finger tips.


~Grind all the ingredients from 5 to 9 with 1/ 2 cup water to make a masala paste and keep aside.
~Heat a fry pan with 1/4th of oil and semi fry the chicken pieces. (both sides) and keep aside.


~Grind the cashew nut to a powder add little water  & grind again and make a paste and keep aside.


Preparation (of curry)

~Heat 1 tbsp oil & saute the onions.
~Add the masala paste which have been grinded (ginger, garlic and powders) and salt and mix well.
~Add the semi- fried chicken along with pureed tomatoes & freshly grinded garam masala and 1 and half cup of water.


~Mix well and cook in high flame with closed lid.
~When the chicken is half cooked, add the nuts paste & combine well.
~Check the taste and adjust chilly powder and salt according to your taste.
~When the gravy thickens up, reduce the flame and add coriander leaves and remove from flame.

Mini Chicken Kebabs (Fried Version)


         Kebab is traditionally made with lamb...These are mini chicken kebabs which are actually quite easy to make & without a doubt, they are exceptionally tasteful....I guarantee !!


         Most of the Chicken Kebab or Kabab recipes are skewed and grilled or tandoor variety where the chicken chunks are marinated in special spices and then grilled on skewers or cooked in tandoor....
         This is a fried version & it may not be of the authentic type...But this is a simple Indian recipe that you can serve as an appetizer or as a side dish along with chopped onions/ coriander chutney/ tomato ketchup..It just tastes heavenly..A big thanks to my mom who shared this recipe with me...She tried it out from some cookery show..Something really interesting for kids too...!!


Ingredients

1.Chicken - 1/2 kg
2.Green Chilly - 5 (slit onto half & finely chopped)
3.Egg white - of 1 egg
4.Soya sauce -1tbsp
5.Onion - 3 (medium) (finely chopped)
6.Garlic - 4 cloves (grated)
7.Ginger - 3/4 tsp (grated)
 8.Bread crumbs-5-6 tbsps
9.Coriander leaves - 1 tbsp (nicely chopped)
10.Cumin seeds powder-1/2 tsp (optional)
11.Salt - as reqd


Preparation

~Slice the chicken into small pieces & de-bone them.


~Grind these slices into a thick paste. (need not grind for long)


~Into this chicken paste add chopped green chilly, grated garlic & ginger, chopped onions, soya sauce, egg white (only half of egg white would be required) chopped coriander leaves, cumin seeds powder & mix well with a spoon.
~Now give a taste & add required amount of salt & can increase the green chilly too..
~Add the breadcrumbs & combine well with your hands.


~Refrigerate this mix at least for half an hour. (or freeze for 15 mins)
~If its really very sticky add more of bread crumbs to adjust.
~Now make the shapes of mini kebabs & just deep fry them..


In the below two images the kebabs are prepared by my mom..More perfect shapes..you can see the difference.....!!

Chicken Macaroni Cake - Valentine's Day Special !!!


               Have heard & tried many types of sweet cakes..But I never got a chance to experience such a fabulous spicy creamy cake with chicken & macaroni...It was indeed a wonderful combination...Sweet Italian Macroni cakes(Pastira) are also famous...But just couldn't resist ourselves from spooning into this macaroni cake with a twist...



             This is something really perfect for a romantic candlelight dinner (If you are interested in such methods to express your love)..Pack it for a trip...or as a valentine's day gift for your spouse...since the way to man's heart is definitely through his stomach...This cake will not let you down...Give it a try ..& you might win your partner's extra love this Valentine's Day...Wish you luck !!


Ingredients

1.Chicken - 200gm
2.Macaroni / Pasta- 200gm (nearly 1 1/2 cup)
3.Milk-1 cup
4.Eggs-2
5.Garlic-5 pods
6.Ginger- 1 tsp/ a small piece
7.Green chilly-3
8.Onion-1 (large..chopped finely)
9.Pepper-1/2 tsp or more
10.Coriander leaves (chopped)-1 tbsp
11.Garam Masala-1/2 tsp
13.All Purpose flour/ Maida-2 tsp
14.Salt-as reqd.


Preparation (of macaroni & chicken)

~Cook macaroni with 3 cups of water, 1 1/2 tsp salt & 1 tsp oil. (15 mins in high flame...stir occasionally)
~Check its tenderness & remove from flame, drain & keep aside.
~Cook chicken in a pressure cooker with 3/4 tsp salt, 1/2 tsp pepper & 1/2 cup water.(3-4 whistles)


~After release of the steam, open it & shred the chicken to pieces.


Preparation (of cake)

~Heat 1 tbsp oil & saute chopped onions with 1/2 tsp salt until transparent.
~Meanwhile,grind ginger, garlic & green chillies together. (Need not make a paste)
~Add this ground mix to the sauteed onions & mix well. (1 min)
~Now add shredded chicken pieces with garam masala, pepper & coriander leaves.
~Saute for 3-4 mins in medium flame.
~Check the taste & Adjust salt & pepper accordingly.. (should stand a little higher as we are going to add egg & milk)


~In a bowl, beat the eggs along with milk & maida.
~Off the flame & add the egg mix to it & combine well.


~Add the cooked macaroni & make sure its all incorporated well.


~Mix well & adjust salt & pepper accordingly to your taste.

~Preheat the oven to 180 degrees.
~Pour the spicy cake batter to the buttered/ghee/oiled cake pan & bake for 20 mins.
~Else cook it in a pressure cooker without keeping the weight for 20 mins in low flame.
~Mine is prepared in a pressure cooker..
~In both cases, remove & cool the cake before serving..
~Garnish the cake with tomato ketchup & coriander leaves...

Never ever had such creamy macaroni with chicken..!!
